If you're looking for a quick and satisfying side dish or snack, these Crispy Polenta Slices made in the air fryer are a total game-changer. At first glance, tubed polenta doesn't look like much, but it's a hidden gem in my kitchen.
The great thing is that you can find pre-cooked polenta rounds from most grocery stores. This polenta recipe is versatile, crunchy, and absolutely delicious.
I sliced mine about ½ inch thick and lightly brushed each slice with olive oil before placing them on a baking sheet or right into the air fryer basket. In just a few minutes, they turn perfectly golden brown and crispy on the outside, while staying creamy on the inside.
You could also pan fry or even oven bake the polenta slices, but I find that using the air fryer saves time and cleanup-plus, you only need a couple of tablespoons olive oil.
Once they're crisped up, I love sprinkling grated Parmigiano Reggiano over the hot slices for an added savory kick. They make an amazing addition to salads, antipasto platters, or served as a base for sautéed veggies or a poached egg cooked over medium.

🍽️ How to cook polenta slice?
Here is how to make these easy polenta cakes (the full recipe is below!):
Gather up your ingredients.

The first thing I did was cook up the quick fresh canned cherry tomato sauce to go with it. This is optional. You could use a very good ready-made sauce to make it quicker!

Step 1: Preheat air fryer to 400°F. Cut the polenta into ½" thick slices. Here's the ingredients ready to assemble the polenta slices.


Step 2: Spray or brush each side of the polenta cakes with the 1 tablespoon olive oil.
Step 3: Season with salt and pepper.
Step 4: Spray the tray (or basket) with non-stick cooking spray.
Step 5: Add the polenta slices to the tray spacing them out.
Step 6: Cook the polenta cakes for 25-30 minutes, flipping halfway through cooking, until edges are golden brown.
Step 7: Top with grated Parmigiano and return to the air-fryer for a couple minutes, or until melted.

Step 8: Serve with my tomato sauce or any dipping sauce you like!

How to bake polenta slices in the oven?
No air-fryer, no problem! Here is how to cook it up in your oven:
- Heat the oven to to 400°F.
- If you have a wire rack, place it on top of a baking sheet. Line with parchment paper. Spray the wire rack with cooking spray, and add the polenta slices in a single layer.

- If you do not have a wire rack, line the baking sheet with parchment paper and heat the baking sheet while the oven heats up. Spray the baking sheet and carefully add the polenta slices (take care to not burn your fingers as it will be a hot pan).
- Bake in 400°F oven for 15-20 minutes, or until nicely crisped and has a nice color.
- If adding cheese, sprinkle on the Parmigiano the last couple of minutes.

- Freeze: I do not recommend freezing any leftovers.

- Make polenta chips - This quick appetizer is a great recipe for changing up the shape and thickness of the polenta. You can easily make perfect round chips that are a tad bit thinner. They go great with salsa, dips, or even with a soup.This is why buying a polenta tube makes for a great snack - because you have tons of options! You will have to adjust cooking times for each variation.
- Add seasonings - You could keep it simple with a little sea salt and pepper, and you can also add other flavors. Truffle salt would be delicious, as would chili powder. You can even use different herbs on it if you're wanting to give it more flavor.
- Polenta fries - You can easily make fries by cutting the polenta into ½" thick sticks instead of discs. Just cook as directed for crispy fries and serve with your favorite dips.
- Dairy-free- If you're vegan, or dairy-free, you could use your favorite dairy-free (vegan)cheese to sprinkle on top.

- 18 oz tube precooked polenta
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon sea salt
- ¼ teaspoon black pepper or more to taste
- 2 tablespoon grated Parmigiano-Reggiano cheese
- ¼ cup of thin slices of Parmigiano-Reggiano cheese
- Favorite dipping sauce like marinara sauce
Instructions
Prep sauce:
- If you're planning to serve these with sauce-and I highly recommend it-go ahead and make a homemade sauce before prepping the polenta. Of course, a really good store-bought marinara will work beautifully too and save you some time!
Preheat the air-fryer:
- Start by preheating your air fryer to 400°F, following the manufacturer's instructions.
Slice and prep the polenta:
- Next, grab your tube of polenta. Carefully slice off one end, then gently squeeze it out onto a cutting board. Pat the polenta dry with a paper towel to help it crisp up nicely. Using a sharp knife, cut into ½-inch thick rounds.
- Brush or spray both sides of each polenta slice with about 1 tablespoon of olive oil, and season with a little sea salt and black pepper to taste.
Prep air-fryer:
- Once your air fryer is ready, spray the basket or tray with nonstick spray to prevent sticking. Arrange the polenta rounds in a single layer, making sure there's space between each one so they get nice and crispy.
Cook in the air-fryer:
- Air fry at 400°F for 25-30 minutes, flipping the slices halfway through, until the edges are beautifully golden brown.
Add on some cheese:
- Sprinkle about 2 tablespoons of grated Parmigiano cheese over the tops of the slices and pop them back in the air fryer for 1-2 minutes, just until the cheese is melted and a little toasty.
Serve with sauce:
- Top with extra Parmigiano-Reggiano or fresh chopped Italian parsley, if you'd like. Serve warm with your favorite sauce for dipping
