  • Egg whites: You will only be using egg whites. You can use a carton of egg whites, or crack open your own eggs and separate the egg whites.
  • Cherry tomatoes: You could use plum or Campari tomatoes, just cut them in small chunks. You could also use roasted red peppers in place of the tomatoes, or add some in for extra flavor.
  • Red onions: You could use Vidalia, Sweet onion, or even a shallot.
  • Baby spinach: Spinach cooks up so quickly. Use also arugula or any leafy greens can work such as kale, Swiss chard, arugula or collard greens.
  • Sea salt: Just adding some to season, add more or less to your taste.
  • Freshly ground black pepper: Again, just adding to season, and you could add a few more grinds if you like a little more pepper flavor.
