    No-Bake Summer Treats!

    The temperatures will only get higher and higher these days. We are in the dog days of summer and that means it's time to chill out a little! These fun and delicious No-Bake Summer Treats are just what you need to keep you cool!

    Let's start off with this gorgeous No-Bake Limocello Cheesecake, shall we?

    When I posted this recipe FIVE years ago (seriously, where does time go???), I declared this my “absolutely FAVORITE cheesecake!!!” There were three exclamation points! That must mean that this was something pretty special. Being so spoiled by mom’s amazing cheesecakes, I usually stick to the no-bake variety so I won’t offend her by not asking her to make us one and also because she’s the “cheesecake queen”.  Mom has earned this title!

    Limoncello is an Italian liqueur made with lemons. If you’re making this for the kids or you can’t get a hold of Limoncello, use freshly squeezed lemon juice.

    Next up is this gorgeous Blueberry Icebox Pie. The filling is creamy and dreamy and bursting with fresh blueberries. It’s a frozen pie so we are talking about total heat relief in every bite! Truly so easy to make and is the perfect dessert to bring to a summer barbecue or just when you feel like making something with the kids.

    Another family favorite is this No-Bake Strawberry and Mascarpone Cheesecake. In Italian it’s called also a sbriciolata. Sbriciola means crumbs, so a sbriciolata is like a crumble type cake, referring to the crumble topping. A sbriciolata comes from the region of Italy where my in-laws live (Lombardy) and over there it’s called sbrisolòna (also called sbrisulòna, sbrisolìna, sbrisulùsa or sbrisulàda).

    A sbriciolata also can be found in Emilia-Romagna and Veronese. This is another creamy and dreamy cheesecake and then you have that cookie crumble topping that makes this cheesecake irresistible!

    One last one to consider is this Strawberry Marshmallow and Cracker Cake. It's fluffy and so pretty. No-bake and pretty impressive!

    So when it’s 95 degrees outside in the shade, don’t turn on your oven! Keep cool with one of these crowd pleasing no-bake summer treats! Happy Summer No-Baking!
