Tartufi al Cioccolato - Chocolate Truffles
Hi! I promised you another chocolate dessert, and this one is truly special. These Tartufi al Cioccolato are decadent, rich, and almost impossible to stop eating once you start. They're inspired by classic Italian chocolate truffles but made in the easiest way possible with biscotti, melted chocolate, and a splash of rum. This is one of those no-bake desserts that feels elegant without being fussy.
This recipe is also sentimental for me. My husband baked these with me, and we had a very hard time not "sampling" half the batch before they were finished. Once you try them, you'll understand why.
Why you'll love these Italian chocolate truffles
- No-bake Italian dessert that comes together quickly
- Rich chocolate flavor with simple pantry ingredients
- Perfect for holidays and gifting, especially Christmas
- Customizable truffles with different coatings
- Authentic Italian-style dessert with rum and biscotti

Ingredients
- Biscotti (1 lb): Use plain, dry biscotti so they grind finely and hold the truffles together. Any dry cookie works in a pinch.
- Milk chocolate (1 bar, 2 oz), melted: Dove Chocolate Discoveries or any good-quality milk baking chocolate you enjoy.
- Rum (3 tablespoons): Adds warmth and depth. Substitute amaretto, brandy, or coffee, or skip for alcohol-free.
- Cinnamon-dusted chocolate almonds (1 package, 8 oz): For crunch and flavor. Pistachios, hazelnuts, or cocoa powder also work.
- Dark chocolate (4 bars, 2 oz each), melted: For coating. Use good-quality dark chocolate for the best flavor.
Step by step: how to make Tartufi al Cioccolato
- Grind the cinnamon-dusted chocolate almonds in a food processor until fine. Transfer to a small bowl and set aside.
- Add the biscotti to a food processor and pulse until finely ground.
- Transfer the ground biscotti to a large mixing bowl.
- Add the melted milk chocolate and rum to the biscotti. Mix until fully combined and a dough forms.
- Roll the mixture into 2.5 cm (1-inch) balls. Try not to eat too many at this stage.
- Dip each ball into the melted dark chocolate until fully coated.
- Immediately roll the truffles in the ground chocolate almonds.
- Place on a tray and refrigerate for 30 minutes to set.
- Before serving, let the truffles come to room temperature for the best texture and flavor.

Recipe substitutions and variations
- Roll the truffles in cocoa powder instead of nuts for a classic finish.
- Use pistachios or hazelnuts if you don't like almonds.
- Swap rum for amaretto, brandy, or espresso.
- Use plain dry cookies if biscotti isn't available.
- Make them alcohol-free by replacing rum with milk or coffee.

Pro tips
- Grind everything very finely so the truffles hold together smoothly.
- Let the melted chocolate cool slightly before mixing so it doesn't separate.
- Use a fork or dipping tool for cleaner chocolate coating.
- Let truffles sit at room temperature before serving for the best flavor.
