Ingredients

  • pounds skinless boneless chicken breast halves, cut into bite-size pieces (or skinless chicken thighs)
  • ½ cup honey
  • ¼ cup soy sauce use tamari for gluten-free (or coconut aminos)
  • 2 Tablespoons ketchup or 1 Tablespoon tomato paste
  • 1 small onion diced
  • 1 Tablespoon sesame oil
  • ½ teaspoon garlic powder or 1 garlic clove minced
  • 2 teaspoons cornstarch
  • ½ cup cold water tablespoons water
  • 2 Tablespoons sesame seeds or to taste

Instructions

  • In a large bowl, whisk together the cold water and corn starch until dissolved. Add honey, soy sauce, ketchup, onion, sesame oil, garlic powder and ice vinegar. Stir together to combine.
  • Place the chicken in the bowl with the sauce and stir to combine. Add the chicken and sauce to a 3 1/2 or 4 qt slow cooker.
  • Cover and cook on low 3 hours, or on high for 1 1/2-2 1/2 hours. Chicken is ready when the internal temperature measures 165° F on an instant read thermometer.
  • Toast the sesame seeds: While the chicken is cooking, in a large skillet, add the sesame seeds and on medium heat, lightly toast them. Keep stirring them as they’re getting a little color, as you don’t want them to get too brown. Set aside in a small bowl until you’re ready to serve.
  • Serve over cooked rice (or whatever you prefer) and garnish with toasted sesame seeds and chopped scallions; if desired.

Notes

Store: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat: To reheat the sesame chicken and sauce, place in a skillet on medium-low. You may need to add a bit of water to loosen the sauce a little, or reheat in the microwave.
