Mango Salsa

This mango salsa is our go-to recipe for juicy mangoes of the season! A salsa recipe that is full of flavor, goes great with so many dishes, and is super easy to make. Wonderful to serve with grilled tofu, fish, chicken and even beef. Just delightful on its own with your favorite tortilla dish. Recipe yields about 3 cups.

Ingredients

  • 2 plum tomatoes diced
  • 2 cups mangoes diced
  • 3 scallions diced
  • ½ cup red onion chopped
  • juice of two limes
  • ¼ cup cilantro chopped (just the leaves)
  • 2 Tablespoons olive oil

Instructions

  • Mix all the ingredients in a small bowl. Check the flavor and adjust, if needed, by adding more lime juice, extra-virgin olive oil and even salt. Serve immediately with tacos or just some good chips.

Notes

STORAGE SUGGESTIONS: To be totally honest, if you have any leftovers, it will be a surprise! Especially if you serve it for friends or family. If you do have any leftovers, tore it in an airtight container in the refrigerator for a few days. It's best served fresh.
