– 2 Tablespoons extra-virgin olive oil – 1 medium onion minced (sweet, white or red onion is fine) – 1/2 pound sliced fresh mushrooms – 1 pound ground turkey you could use ground chicken or turkey sausage (removed from casing) – 1 cup of pumpkin puree not pumpkin pie filling – 1/2 cup white wine or additional reduced-sodium chicken broth – 1 sprig fresh rosemary reserve some leaves to garnish – 1 cup reduced-sodium chicken broth I used my own homemade broth (or vegetable broth) – 1/4 teaspoon freshly ground cinnamon – 1/4 teaspoon nutmeg – 1 teaspoon sea salt – 1/4 teaspoon freshly ground pepper – 1 pound rigatoni pasta
