– 2 ¼ cup flour plus 1/4 for rolling dough – 1 tsp. baking powder – grated zest of 1 lemon – 4 Tbsp. butter melted – ½ cup sugar – 1 teaspoon vanilla extract – 2 large eggs lightly beaten – ¼ cup milk – 2 cups of vegetable oil for deep-frying enough for a 2- quart saucepan – confectioner’s sugar for serving
