– 1/2 cup oat milk or whatever milk you prefer – 1 teaspoon apple cider vinegar – 11 Tablespoons unsalted margarine melted (I used Earth Balance vegan sticks) – 1 teaspoon apple cider vinegar – 3/4 cup vegan sugar – 3 medium ripe peaches about 1 1/4 pounds, skins on, pitted, and cut into 3/4-inch wedges – 1 cup coarse yellow cornmeal or polenta – 3/4 cup all-purpose flour – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/4 teaspoon sea salt – 1/4 cup apple sauce – 1/2 teaspoon pure vanilla extract
