Can I leave out the saffron in this recipe? Saffron is very expensive and has a very strong flavor if too much is used. All you need is a very little bit! Add your pinch of saffron to a teaspoon of warm water or or the broth you have heated up for this dish for  five minutes.  The natural flavor will be released and it will help to avoid any saffron clumping in the recipe.

Can I leave out the peas? If you are not a pea fan or have kids that don't enjoy peas, just leave them out!  The chicken and rice alone are so flavorful! If your family enjoys broccoli or spinach, serve it on the side.


What can I use in place of saffron? If you can't find any saffron or don't like it, you could try adding garam masala, turmeric, ras el hanout, or baharat.
