– 1/3 cup peanut or vegetable oil – 2 small shallots 1 thinly sliced, 1 finely chopped – Kosher salt – Juice of 3 limes – 2 teaspoons fish sauce – 1 tablespoon soy sauce – 1 clove garlic minced – 1 2 - inch piece ginger peeled and minced – 1 red jalapeno pepper thinly sliced – 4 cups chopped seedless watermelon – 1/3 cup chopped fresh cilantro – 1/3 cup chopped fresh basil – 1/3 cup chopped fresh mint – 1 tablespoons cocktail peanuts roughly chopped

I like to cut my watermelon into chunks because as it’s faster and a little easier. If you happen to own a melon baller, be sure to use it as it makes it a little prettier for presentation. The fresh mint, basil and cilantro all gets added at the very end so the mint doesn’t turn brown. I like the herbs to be super fresh when I’m making a salad like this.

How to pick a good watermelon Look for a yellow patch. Watermelon plants grow on vines that run along  the ground, developing a light-colored patch on their undersides where  the sun doesn't reach. Choose a heavy melon in comparison to others. Give it the "knock test". Many people swear that a ripe watermelon will  sound hollow when you tap it. If the sound is muted, it  is probably mushy inside.
