The beets are so pretty! It sounds like a great recipe.
I try to eat veggies every day, but I find it difficult in the winter. I need to make it a priority!

I have yet to try golden beets. I don't like red beets but the color of these makes them look soo appetizing and the recipe definitely highlights them well.

Thumbs up on the health...ier eating plan for 2012! This recipe sounds delicious, I love the idea of the orange with the beets! For those that mentioned the mess of red beets, I wear a pair of dispoable gloves and peel them in advance of roasting, I find that peeling after roasting makes more of a mess! Also, if you are looking for some healthy recipe inspiration, I will be posting some on the blog this month too!

Cookin' Canuck says
These beets are so beautiful and it's wonderful that you have access to fresh herbs right now (my plants are frozen solid at the moment).

I just started liking beets a year ago. I wish I could get back all the years I missed enjoying them! These are gorgeous, Lora, and with the orange, honey and thyme, no doubt delicious. Great to have a neighbor loaded with beautiful herbs. The frost already annihilated some of mine..time to bring some inside and baby them through the winter - and thyme has survived thus far 🙂
Shulie says
Ooh this salad looks fantastic, reminds me I need to pick up some beets. SO that is what you've done with the herbs from your neighbor's yard!! 🙂
Terra says
I used to be afraid of beets, I always thought the flavor would be awful. Then I worked with a wonderful Chef in Tucson, AZ. He had me try a golden beet, I was shocked, amazed, and in love! A golden beet has the most gorgeous flavor, I love the idea of adding Orange and thyme, sounds wonderful! I am big on incorporating healthy into the treats I already love:-) So I made a baked doughnut finally. I am excited to make soup this weekend:-) Hugs, Terra

Yes it's vegetable time and this dish celebrates it as much as we celebrate sweet in December!
The Mom Chef says
I'd love to find some golden beets like that. They're gorgeous. Very jealous of your neighbor's herbs as well. The temps in the teens over the past few nights have done in the few I had struggling to survive.
Yes, eating healthier is on our menu as well.
Nancy says
I just bought some beautiful yellow beets at the store yesterday and if I have extras I know EXACTLY what I am going to make - this! Love the simplicity of this dish!
EA-The Spicy RD says
Oh my goodness, these look and sound so yummy! I used to not be a beet eater, but I've been lovin' them the past several years. The great think about beets is that they can hide out in your fridge for awhile and not go bad 🙂 Even better, that you were able to use your neighbors thyme! Cheers to eating more veggies in 2012!
Jennifurla says
I can never find golden beets, want.
Krissy's Creations says

I used to hate beets (probably because growing up I never had them if they weren't out of a tin can). Now I love them roasted (when they come out of the garden.)
BigFatBaker says
I love beets! The golden ones look so pretty too. I am trying to eat more veggies so this will be a perfect side dish one night soon!
Deb says
The golden beets are an elegant color! This recipe would be a wonderful alternative to my usual preparation of roasting. Luckily the heartier herbs in my garden are still producing: thyme, sage, mint, rosemary and even the parsley.
Beth Michelle says
I love the color of these beets! They are so pretty and probably dont stain your hands as bad! I havent seen any golden beets here in Israel but there is always an abundance of red beets. I will have to try this!
Lizzy Do says
Oh, I LOVE beets! And since I'm the only fan in the house, I can make a whole batch just for me! Perfect with thyme...mmmmmmmm.
