My deepest thanks go to Lora for asking me to write a guest post for her site. I’m not exactly sure how we found each other (must have started with Twitter), but we have been in constant contact for many months now. As you can see from her posts, Lora is an incredibly talented and thoughtful writer and baker. She cooks with so much soul and her stories are always so touching.
I knew that it wouldn’t be hard to come up with a recipe to share with all of you, because Lora and I are very similar in terms of the things that we enjoy cooking. Even during our childhood, food played a role in our lives. So we look to it to find comfort and as a way to express ourselves.
Chocolate Chip and Boozy Raisin Oatmeal Cookies
2 cups flour
2 heaping cups oats
1 cup sugar
1 cup brown sugar (do not pack)
1 tsp baking soda
1 tsp baking powder
2 sticks butter (room temperature)
1 tbsp vanilla extract
3/4 cups semi-sweet chocolate chips
3/4 cups raisins
2 tbsp rum
Mix the dry ingredients in a bowl. Cut the butter into tablespoon size hunks and mix into dry ingredients with your hands. The mixture should be crumbly but starting to come together. Then add the eggs and vanilla and continue to mix with your hands until everything is incorporated.
Place the raisins in a separate bowl and coat with the rum. Let sit for five minutes. Add the raisins and rum to the dough. Add in the chocolate chips and mix in until incorporated throughout.
Bake them at around 400 degrees for 12-15 minutes for each batch. Every oven is a little different and if you are using a baking stone you need the temperature a little higher than a baking sheet.
