In New England they are called jimmies. I read that these teeny balls of happiness were invented in France and the French called them nonpareils-without equal. Yes, nothing compares to sprinkles especially when they are nestled comfortably on buttercream wedged between two layers of delicious and moist cake!
The movie was not that good. I didn’t care.
Gabby’s Victoria Sandwich Cake
serves: approximately 8

Slightly adapted by Wilton
3 cups sifted cake flour
2 1/2 teaspoons baking powder
1/2 teaspoons salt
1 3/4 cups sugar
2/3 cup butter, softened
1 1/2 teaspoons vanilla
1 1/4 cups milk
1/4 cup sour cream
Buttercream Frosting and Jam
Frosting recipe see below
1/4-1/2 cup your favorite jam (I used strawberry!)
Preheat oven to 350°F. Grease bottom of two 8-inch round cake pans and line with waxed paper or parchment paper. Mix the milk and sour cream together; set aside. Sift together flour, baking powder and salt; set aside.
Beat the sugar and butter together until light and fluffy.
Add eggs one at a time to the creamed mixture. Add the vanilla and beat until and vanilla thoroughly combined.
Add flour mixture to creamed mixture alternately with milk/sour cream mixture. Stop the mixer and scrape down the sides of the bowl with a spatula and beat well after each addition.
Spread batter evenly in prepared pans.
Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool layers in pans on wire racks 10 minutes. Remove from pans; cool completely.
In a medium sized bowl, beat the butter until smooth. Gradually add in the confectioner’s sugar. Add in the milk a tablespoon at at time until you have a nice and spreadable consistency.
When the cake is completely cooled (if the cake is not completely cooled, it will ooze all over the sides of the cake), spread the buttercream frosting onto the center of the first layer up the edges of the cake.
Spread the jam onto the buttercream frosting.
Refrigerate before serving. Enjoy!
