This has been the go-to dessert/snack/breakfast in my family for the past 10 years. We make one almost every week. The kids love it because of the chocolate chips. I love it because it is so good! I will try some other variations this summer. You could add whatever you like to this recipe: dried cranberries, nuts, raisins, white chocolate chips...any thing goes!
Banana Bread with Chocolate Chips
1 1/2 cups of flour (I sometimes add 1/2 whole wheat and no one knows the difference)
1 tsp sea salt
1 tsp baking soda
1 cup mashed bananas (about 3-4 very ripe)
1 cup sugar (I always add about 1/2 and it turns out fine)
1 egg
1/4 cup canola oil (could be substituted for apple sauce)
a handful of chocolate chips (could be a big handful or a little one)
2 tablespoons of sour cream (if you don't have it, it will be fine without it)
Mash the bananas in a bowl. Mix the egg with the sugar and oil and stir into the bananas. In a separate bowl, whisk together the flour, sea salt (regular salt is fine too), baking soda. Add the dry ingredients to the banana mixture. Fold in the chocolate chips. Bake at 350 F for 55-60 minutes, or until toothpick inserted in middle comes out clean. Allow to cool in pan for 10 minutes, then remove to a wire rack to cool completely.
