Speculoos–French Fridays with Dorie

Speculoos (or speculaas) are crisp and full of spices. Perfect with tea or coffee. Delicious made small or large. They are traditional Christmas cookies served on St. Nicholas’s eve on December 6th in their native Belgium. That old St. Nick is a lucky guy! 
What is there not to LOVE about a speculoos?!? I made my batch and I used two different cutters. I used the smaller one and the larger one. The smaller sized speculoos disappeared immediately. The little hands ran off with those as soon as they cooled.
The larger ones…well, let me tell you about those! It’s funny how I had two friends come by yesterday when I told them what I was baking. One friend came by to show me a new make-up she was wearing. Suspicious? I think so.

The other friend I did actually invite. We were going to her house for dinner. Then I mentioned I was baking. We ended up eating at my house. Speculoos went vamoose pretty rapidly.

The smell is heavenly when you are baking them. The crispiness is wonderful. I happened to save a few for my mom to try. They ended up being a little bit softer today. Even better the second day. This is a new holiday favorite for the Duchess’ casita. I AM IN LOVE with this recipe.

You know the drill, we are not allowed to share the recipes from Dorie Greenspan’s new book. The book is incredible. I read Dorie tweet earlier today on Twitter that it has been reprinted. So if you were not lucky enough to get a copy, you could get one in time for Christmas!

  9. OMG, that cake looks beyond incredible. You can see that it's spongy. and the way you drizzled the topping looks effortless but stylish. perfect balance here. I'm surprised its so cold in FL this year. It's pretty temperate here in CA.

  10. Oh, I was in Belgium last year and I had the most delicious speculoos at this one cookie shop called Dandoy! They still use the traditional wooden molds. Yum, this post is totally bringing them back to me! It's funny that you post this because I think that I might have been in Belgium to this day one year ago. I wish I was there right now!

  16. Many years ago i had a chance to have these yummy cookies in a cafe in the midst of Brugge, Belgium...and loved every bite. I don't have Dorie's book so I'll take your word that she has a great recipe ;O)

    Now...wow...wow...how stunning is that cake?!?

  28. Ooh, have you ever tried Speculoos spread? It's made from the cookies that are ground up. It's the consistency of nutella, but tastes like a sweet spice cookie. It's out of this world.

  29. Oh, those look wonderful. My mom is Belgian and she used to make them all the time but it's been years now since I've had one. I can smell them cooking in my mind. Yours look absolutely perfect.
